of baking fish in fresh fig leaves

Place 3 or 4 washed fresh fig leaves in a baking dish (first drizzle a little oil beneath leaves), overlapping slightly. Place fish atop leaves, sprinkle with salt, drizzle with olive oil. Curl sides of leaves around fish. Hold in place with toothpick if necessary, but usually the oil does the trick. Bake at 350F for around 25 minutes, till fish is medium-rare. Fig leaves aren't meant to be eaten but perfume the fish with a slightly coconutty flavor.
