for some dear Tartine buttermilk scones:

3/4 c currants
4 1/4 c flour
2 tbsp baking powder
3/4 tsp baking soda
1/2 c sugar
1 1/4 tsp salt
1 c plus 1 tbsp butter
1 1/2 c buttermilk
1 tsp lemon zest

topping:
3 tbsp melted butter
4 tbsp turbinado sugar

preheat oven to 400. butter baking sheet. combine currants w/ warm water till plumped. drain. sift flour, baking soda, baking powder into lg mixing bowl. add sugar and salt and stir to mix with a wooden spoon. (i also like to add cardamom and nutmeg.) cut butter into 1/2-inch cubes and scatter cubes over dry ingredients. if you are mixing by hand, use a pastry blender or 2 table knives to cut butter into dry ingredients. if using mixer, pulse on and off so you dont break down butter too much. course mixture w/ pea sized lumps of butter visable. add buttermilk all at once along w/ lemon zest (i also like to add walnuts/pecans, & some vanilla bean/extract.) and currants and mix gently w/ wooden spoon or low speed. continue to mix just until you have dough that holds together. form into an 18 inch long rectangle, 5 inches wide, 1 1/2 in thick. brush with butter and sprinkle with turbinado sugar. bake for 25-35 minutes.
